As January unfolds, there is a bounty of winter ingredients to be explored, highlights of the season include the earthy richness of winter roots, the crisp allure of kohlrabi and pickled apple and the fragrant sweetness of mead matched with cranberries as well as new additions for our Winter menus;

Enjoy perfectly seared hand dived Scottish scallops with young heritage carrots and tarragon dressing; the Winter salad at its best, with Lancashire Bomb cheese, black winter truffle, salsify, hazelnut dressing; Stokenchurch farm duck with swede, roast clementine puree and January king cabbage. Our Ibstone fallow deer now features beetroot puree, confit of pinecones, douglas fir, and pickled golden beetroot.
